I just feel like any numbers generated indoors are not "real"...the game is played outside with wind, grass, and nature playing a factor in every shot.

I was fitted for SM 10s last year.
Like you I was a little nervous beforehand but Andrew (at St Ives) put me at ease and I had a really fab time.
We just took 6 wedges out to the short game area and I hit them to see which suited me the best.
